Shan Malay Chicken Biryani

Shan Malay Chicken Biryani masala is a unique fusion – biryani with Malaysian flavors. It includes spices like lemongrass, coconut, and star anise, giving it a slightly sweet and aromatic profile very different from Pakistani biryani. It's milder and often cooked with coconut milk.

Quick recipe (serves 4-6):

1. Marinate 1 kg chicken with Shan Malay Biryani masala and 1/2 cup coconut milk.

2. Boil 750g basmati rice with pandan or screwpine leaves (if available).

3. Layer rice and chicken. Add fried onions and coconut milk.

4. Cook on low heat (dum) for 25 minutes. Serve with raita and cucumber slices.
