Quick recipe (serves 6-8):
- Fry 1kg beef shank in ghee until brown.
- Add Shan Nihari masala, 2 tbsp ginger paste, and 8 cups water. Bring to a boil.
- Cover and simmer for 4-5 hours (or overnight) until meat is falling apart.
- Mix 1/2 cup flour with water to make a paste. Stir into the stew to thicken.
- Serve with naan, fresh ginger, lemon, and green chilies.
