Shan Daal Masala is a spice blend designed specifically for lentil curries (dal). It makes any dal – masoor (red lentil), mung (yellow lentil), chana (chickpea lentil), or toor (pigeon pea) – taste perfectly spiced. It includes a tarka (tempering) mix.
Quick recipe (serves 4):
1. Boil 1 cup of your preferred dal with 3 cups water and salt until soft.
2. In a separate pan, make tarka: heat 2 tbsp oil, add 1 chopped onion, 2 garlic cloves, and a tomato. Fry well.
3. Add Shan Daal Masala and the cooked dal. Simmer for 10 minutes. Serve with rice or roti.
